Highland Drovers sell fully aged beef from Highland cattle that are at least three years old, and have had a guaranteed quality of life. They opened their first butcher's shop in Perth in December 2012, specialising in Highland beef, traditionally hung for between 21 and 28 days, Hebridean lamb and native breed pork, sold alongside with other speciality meats, hand-made raw and cooked products.

The company was formed as a response to the 1996 directive that banned beef from over 30-month animals being allowed into the human food chain. As Highland cattle mature slowly, this meant many processors became unwilling to invest in Highland beef due to low yields. Highland Drovers was formed to create an identity for the Highland cow, and achieve recognition for its excellent beef. The ban has now been lifted, but the company maintains its aim of increasing awareness of Highland beef, to improve welfare conditions and to demonstrate that the Highland cattle breed can make a considerable contribution to the Highland economy.
